The English Grocer: Christmas & Thanksgiving Turkeys by Bernard Matthews Storage: All turkeys are frozen by our supplier and are stored frozen at our depot.
Thawing process:
Defrost your turkey thoroughly on a tray in a fridge (no more than 4°C) allowing 10 to 12 hours per kg. Once defrosted, remove the packaging (retain the label on the front of the bag), giblets and neck. Check that there are no ice crystals in the body cavity and that the legs are flexible before cooking. Once thawed, do not refreeze. Once defrosted, keep refrigerated and consume within two days. VERY IMPORTANT Delivery information: If your order is being posted by overnight or priority post, then your turkey will begin to thaw in an isothermal pouch/ bag or box. We can provide frozen delivery to your door by third party or by our own delivery van. Please specify this request at the checkout page. All deliveries must be accepted before or by 23 December, no exceptions.
COLLECTION INFORMATION: You can also choose to collect your turkey from our depot in Geneva on request. This must be before 23 December, no exceptions.
The depot is on the ground floor and can be accessed by car, train, bus or on foot.
ORDER PAYMENT: We cannot guarantee any order that is not fully paid for in advance by credit card. Cooking: Place turkey in a roasting tin and allow to stand at room temperature for an hour before cooking. Cover turkey loosely with lightly greased foil. Cook turkey in a preheated oven, removing the foil for the final 90 minutes. Remove from oven, cover with foil and rest for 30 minutes before carving. Preheat oven to: 180°C/150°C Fan/Gas Mark 4 Weight (kg): Less than 4kg; Approximate Cook Time: 20 minutes per kg + 70 minutes Weight (kg): Greater than 4kg; Approximate Cook Time: 20 minutes per kg + 90 minutes Check that the turkey is cooked by piercing the thickest part of the turkey with a skewer. When the turkey is cooked the juices should run dear. Please note all appliances vary, the cooking times above are guidelines only and the turkey should be checked during cooking to avoid under or over cooking.
